Pizzelle

A staple for Christmas, this classic anise-flavored* beautiful and light Italian cookie evokes so many childhood family holiday memories. All you need are 6 ingredients and a pizzelle maker. These cookies are perfect for gifts as well as they stay fresh for up to 2 weeks.
*Anise is a common flavor, but you can also use vanilla, almond, lemon or orange oils or extracts.

Servings: 30 pizzelle

Ingredients
  

  • 2 cups of all-purpose flour
  • 1 cup of granulated sugar
  • 4 eggs
  • 3/4 cup of butter, melted and cooled
  • 1 tablespoon of anise extract
  • 1 jigger of Sambuca, optional
  • 2 teaspoons of baking powder1 pinch of salt

Method
 

  1. Preheat pizzelle, iron and lightly brush with vegetable oil
  2. In a large bowl, combine flour, sugar, butter, eggs, anise extract, baking powder and Sambuca. Drop a rounded tablespoon of batter in the center of each onto pizzelle outline on the pizzelle iron and close.
  3. Bake as directed by the manufacturer or until golden brown - 30 seconds to 1 minute. Carefully remove each pizzelle with a spatula to a cooling rack. Once cool, break off the ends of any irregular ones that the batter may have traveled off the pattern. Repeat with remaining batter.
  4. Cool completely and dust with powdered sugar.
