Pumpkin Pie Pizzelle

Pumpkin spice and everything nice, now in pizzelle form! Crisp, light, and perfectly spiced-fall vibes in every bite.

Ingredients
  

  • 1 cup of all purpose flour
  • 1/4 cup of unsalted butter, melted
  • 1 large egg
  • 1/4 cup of pumpkin puree
  • 1/2 cup of granulated sugar
  • 2 teaspoons of pumpkin pie spice
  • 1 1/4 teaspoons of baking powder
  • 1 teaspoon of vanilla extract
  • Pinch of salt
  • Confectioners sugar, for garnish
  • Cinnamon, for garnish

Method
 

  1. In a large mixing bowl, whisk together egg, pumpkin purer and sugar until smooth. Add melted butter and vanilla until combined.
  2. Combine flour, salt, pumpkin pie spice and baking powder and, with a spatula, fold into the egg mixture until well combined.
  3. Preheat your pizzelle iron to medium heat and brush with vegetable oil.
  4. Using a piping bag or Ziploc bag, or with a tablespoon, pipe about 1 tablespoon of batter onto the center of the iron and cook according to your product instructions.
  5. Remove the hot pizzelle onto a cooling rack. Garnish with confectioners sugar and cinnamon. Store at room temperature. Serve immediately.
