In a large mixing bowl, whisk together egg, pumpkin purer and sugar until smooth. Add melted butter and vanilla until combined.
Combine flour, salt, pumpkin pie spice and baking powder and, with a spatula, fold into the egg mixture until well combined.
Preheat your pizzelle iron to medium heat and brush with vegetable oil.
Using a piping bag or Ziploc bag, or with a tablespoon, pipe about 1 tablespoon of batter onto the center of the iron and cook according to your product instructions.
Remove the hot pizzelle onto a cooling rack. Garnish with confectioners sugar and cinnamon. Store at room temperature. Serve immediately.
