Fried Baccalà
Classic fried baccalà, it's not an Italian-American Christmas Eve without it. A true labor of love, this salted cod is fried golden brown, crispy and delicious with a simple wedge of lemon and fresh parsley.

- 1 large piece of baccalà, soaked for 3 days, change water 2x per day
- EggsAll Purpose Flour
- Freshly grated black pepper
- Olive Oil
- Lemon wedges, for serving
- Freshly chopped parsley, for serving
Cut the rehydrated baccalà into serving pieces.
Dip the fish into beaten eggs which are seasoned with black pepper.
Dredge the baccalà in flour.
Fry the cod in a pan of sizzling oil until golden brown on both sides, about 3-4 minutes.
Drain on rack and garnish with lemon and parsley, and extra black pepper, if desired. Serve immediately.
