Fried Baccalà

Classic fried baccalà, it's not an Italian-American Christmas Eve without it. A true labor of love, this salted cod is fried golden brown, crispy and delicious with a simple wedge of lemon and fresh parsley.

Cook Time 30 minutes

Ingredients

  • 1 large piece of baccalà, soaked for 3 days, change water 2x per day
  • EggsAll Purpose Flour
  • Freshly grated black pepper
  • Olive Oil
  • Lemon wedges, for serving
  • Freshly chopped parsley, for serving

Instructions

  • Cut the rehydrated baccalà into serving pieces.
  • Dip the fish into beaten eggs which are seasoned with black pepper.
  • Dredge the baccalà in flour.
  • Fry the cod in a pan of sizzling oil until golden brown on both sides, about 3-4 minutes.
  • Drain on rack and garnish with lemon and parsley, and extra black pepper, if desired. Serve immediately.
